Cheesy Rice Corn DishThis is a nice side dish to take to pot luck dinners or to serve with supper. Freezes well, also! Prepare rice as directed on package. Mix rice together with cheese and mushroom soup in large bowl. Stir in drained Mexicorn, combining well.

Simple Shrimp SaladIn large salad bowl, add lettuce, celery, shrimp. Mix together sour cream, mayonnaise and lemon juice. Toss together lightly; add paprika and salt, to taste.

Toasted Coconut CarrotsCook carrots in salted water until tender. Drain and add butter. Toss carrots until all are covered. Cool. Mix the rest of the ingredients in a plastic bag. Add carrots to bag and shake to coat carrots.
