I'm not sure of your budget. A lunch out is always nice. If you can't afford that, lunch at your home would be fine, too.
If weather permits, do a lunch/BBQ at the park with music and cake. Saturday free markets are always fun and free.
My girls did things like make pizza, movie, cookout, bonfire, hayride, and volunteer at a shelter or riding arena for special needs kids.
