- 2 cups navy beans
- 1 1/2 tsp. salt
- 1/2 cup molasses
- 1/3 cup pickles (finely chopped)
- 1 tsp. mustard
- 1/4 tsp. ginger
- 1/2 cup ketchup
- 1 cup tomato juice
- several slices bacon
Soak beans overnight in cold water. Drain and add 2 quarts fresh water. Cook slowly until skins burst. Drain and save liquid. Add molasses, pickles, seasoning, ketchup, 1 cup liquid from beans and tomato juice. Pour into greased baking dish. Add enough water to cover. Place bacon slices on top of beans. Bake with cover on for 4 1/2 hours at 300 degrees F. Remove cover, bake 30 minutes. Add water as necessary during cooking process.
