Ingredients:

  • 1 3/4 cups flour
  • 1/4 cup sugar
  • 1 Tbsp. baking powder
  • 3/4 tsp. salt
  • 1/3 cup margarine
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • 3/4 cup milk
  • 1 egg beaten

Directions:

Mix dry ingredients. Cut in margarine until mixture resembles coarse crumbs. Mix in raisins and pecans. Mix beaten eggs with milk and add all at once to the dry ingredients. Stir just until blended.

Fill 12 greased muffin cups 3/4 full. Bake 400 degrees F for 15-20 minutes or until muffins test done with a toothpick.

These are good not just at breakfast, but any time.

Ingredients:

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 cup melted butter or margarine
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 tsp. cinnamon

Directions:

Heat oven to 350 degrees F. Grease 15 med. muffin cups. Mix thoroughly the shortening, 1/2 cup sugar and egg. Stir in flour, baking powder, salt and nutmeg, alternately with milk.

Fill muffin cups 2/3 full. Bake 20-25 minutes. Mix 1/2 cup sugar and cinnamon. Immediately after baking, roll puffs in melted butter, then in cinnamon-sugar mixture. Serve hot.
