Building a Wall or Raised Garden Bed from Stone?

I would like to use all the stones that I am digging out of the ground while preparing for planting. It would be great if I could use them to make the sides for a raised bed and for a wall around the garden that already exists.

My questions are: is it possible to just put cement and the rocks in some kind of form (planks of wood?) and let it set til firm? Do I need to just lay rocks and use mortar til it is high enough? And what kind of cement/mortar do I use?
Any information about this subject would be helpful, thank you.

I just used quick-crete. It has held together for 4 years now.
