This is one recipe I love. You usually have the ingredient's already. If you do not have buttermilk on hand, I read and have done this and the (cake tastes just as good). When measuring milk, leave out 1 Tbsp. Then add 1 Tbsp. vinegar or lemon juice to the milk. It works. I was sure surprised the first time I tried it!

Directions

Heat oven to 350 degrees F. Use a 13x9 inch pan, greased.

In large bowl blend 1 cup sugar, 1/2 cup shortening. Dissolve soda in 1 cup buttermilk, Stir into shortening mixture.

Add flour to ingredients a little at a time and adding the spices with the flour. This way they really get mixed well.

Now fold apples into the cake batter, and pour into pan.

Topping: Add ingredients for topping in a small bowl. Mix and set aside.

Sprinkle topping over batter in pan. Bake for 35-45 minutes, and enjoy!

This is a great, moist cake recipe! Great for picnics and potlucks!

Ingredients:

  • 2 1/4 cups flour
  • 3/4 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 stick butter or margarine
  • 1 1/4 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup buttermilk
  • Frosting:
  • 2 cups powdered sugar
  • 3/4 stick margarine
  • 3 oz. cream cheese
  • 1 tsp. vanilla
  • 1 Tbsp. milk or cream

Directions:

  1. Mix eggs, sugar, margarine, buttermilk, and vanilla until well blended.
  2. Then sift all dry ingredients of flour, baking powder, baking soda, and salt together. Add to preceding mixture.
  3. Bake at 350 degrees F for 40 minutes in greased and floured 9x13 pan.
  4. For frosting, mix all ingredients until smooth. Spread on cooled cake.

Servings: 12-15
Prep Time: 20-30 Minutes
Cooking Time: 40 Minutes

Ingredients

  • 1 cup butter, softened
  • 2 1/3 cups sugar
  • 3 eggs
  • 1 1/2 tsp. vanilla
  • 3 cups flour
  • 1 tsp. baking soda
  • 1 cup buttermilk

Icing:

  • 1/4 cup butter, cubed
  • 1/2 cup packed brown sugar
  • 1/3 cup heavy whipping cream
  • 1 cup confectioners' sugar

Directions

In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking soda; add to creamed mixture alternately with buttermilk, beating well after each addition (batter will be thick). Pour into a greased and floured 10 inch fluted tube pan.

Bake at 350 degrees F for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. For icing, in a small saucepan, combine the butter, brown sugar and cream. Bring to a boil over medium heat, stirring constantly. Remove from the heat; cool for 5-10 minutes. Whisk in confectioners' sugar. Drizzle over cake.

Ingredients
  • 2 sticks margarine
  • 1 cup water
  • 4 Tbsp. Nestle's Quick
  • 2 cups sugar
  • 2 cups flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp. vanilla

Frosting:

  • 1 stick margarine
  • 1/2 cup buttermilk
  • 4 Tbsp. Nestle's Quick
  • 1 box powdered sugar
  • 1 tsp. vanilla
  • 1 cup nuts (opt.)

Directions

Bring to boil margarine, water and Quik. Mix sugar, flour, soda and salt. Mix buttermilk, eggs and vanilla. add sugar mixture to buttermilk mixture and mix well, then add first mixture. Bake at 350 degrees for 20 minutes. For Frosting: Bring to a boil margarine, buttermilk and Quik. Add vanilla to above liquid, then add powdered sugar, 1 cup at a time. Then add nuts. Cool and frost cake.
