Cake Mix Banana Bread

loave pans of baked banana breadA great way to use up over ripe bananas. Very quick to make.

Yield: 2 loaves

Ingredients:

Optional: you could add raisins, craisins or chocolate chips, too.

Steps:

  1. Preheat oven to 350 degrees F.
  2. Grease and flour 2 loaf pans.
  3. Add the ingredients in the order listed. Add eggs one at a time. Blend well.
  4. Pour into the two loaf pans.
  5. Bake 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove from oven and place on a wire rack for 10 minutes before taking out of the pan.
  7. Cool completely on the wire rack.

I do not use eggs or oil. So I will be trying apple sauce and extra bananas. Thanks for recipe.

What I dislike about this recipe is the use of cake mix. That is unhealthy. Who knows what garbage goes into that? Why not use just flour etc. after all she already has three eggs and oil to add.

Otherwise the use of bananas is good and I like the addition of pecans, but again, not frugal. Who needs them, just a tiny addition but an expensive purchase.

Sometimes, you have a box of cake mix that is nearing expiration and you want to use it up. They also make great cookies.

Make this all the time. My go to recipe when I have ripe bananas. I add 2 tsp. Vanilla and a cup of chocolate chips. We love it.

I make this whenever I have really ripe bananas. I do add 1 tsp vanilla and at least a cup of chocolate chips (maybe more) . So easy and we love it.
