October 16, 2019

My pickled carrots did not pop. Can I put them in the dish washer as they do with jam to seal them?

Carrots should be canned using a pressure canner. Any other method is unsafe.

No this is not safe. You should try heating them up again, cleaning the jars, getting new lids and using a pressure cooker to seal them with.

Is there a way to can carrots, so they stay crispy and don't get soggy?

Unfortunately the cooking during the canning process changes the composition of the carrot, making it softer than when it was raw. Cooking changes the texture of foods. Pickling carrots will leave them a bit crunchier, but not as much as when they were fresh.
