I have a garden with lots of tomatoes. This year I would like to make salsa. I need a good recipe for one and can I put it up in jars, like I normally would regular tomatoes. I do the boiling of jars and lids (old fashioned way.) Please hurry so I can get started. I also have jalapenos, banana peppers as well.
This is my favorite salsa recipe, I've used for the last 15 years. 8-10 ripe tomatoes (I have used 2 qts of my home canned tomatoes.)
Combine all ingredients in a large non- aluminum pot,bring to a boil, stirring often. turn heat down and simmer for 30 minutes. Pour into hot sterilized jars.
Process in water bath 20 minutes. Makes about 5 pints.

I needed something quick also, so I tried the Mrs. Wages salsa mix from Walmart. To my surprise it turned out very good. It says to scald tomatoes for 3 minutes, but I found this to be too long. Just boil tomatoes until the skin splits so that it will come off easy. I have made 3 batches so far. One pkg. makes about five pints. (08/14/2005)
