Mix eggs, sugar, and oil 2 minutes at medium speed. Add pineapple and carrots. Mix in flour, cinnamon, soda, salt, then add walnuts and coconut. Mix well at low speed. Bake 30-35 minutes at 350 degrees F. Fills a 9x13 inch cake pan. Frost with cream cheese frosting.
For Frosting: All ingredients should be at room temperature. Combine in order given. Liquid required will depend on room temperature and humidity. Makes enough to frost a sheet cake or 8 inch round cake.

I love carrot cake but I've never heard of adding pineapple or coconut. Anyone tried it with these ingredients? (03/29/2006)
