Carrot Pineapple Walnut Quick Bread

Finished bread slices on plate.I just happened to have all of the ingredients I needed to make this delicious dessert bread, in the pantry, at the same time that I was craving a snack.

Total Time: Prep time: 15 minutes Baking Time: 60-70 minutes

Yield: 2 large loaves

Ingredients:

Steps:

  1. Preheat oven to 325 degrees F.
  2. Beat eggs, sugar, and oil.
  3. Eggs, sugar, oil.
     
    Mixing eggs, sugar, and oil.
     
  4. Add carrots, pineapple, and vanilla.
  5. Wet ingredients with carrot and pineapple added.
     
  6. In a separate bowl, combine dry ingredients.
  7. Flour and oatmeal.
     
    Adding cinnamon, salt, and baking soda to dry ingredients.

  8. Beat into carrot mixture. Add chopped nuts, if desired.
  9. Addition of dry ingredients.
     
    Mixed wet and dry ingredients.
     
  10. Pour into two greased loaf pans. I only had the one large, so I also used two individual loaf pans.
  11. One large and two small loaf pans with uncooked batter.
     
  12. Bake at 325 degrees F for 60 - 70 minutes, you will need to check sooner if using the smaller pans.
  13. Small loaf in baking pan.
     
  14. Cool for 10 minutes and then turn out onto a wire rack to finish cooling. Enjoy!
  15. Small loaf on plate.
