Chicken and Rice Porridge (Congee)

Chicken and rice porridge, also known as "congee" is a popular staple in Asian culture. Perfect for breakfast, cold days or when you are under the weather.

- 2 cans chicken soup
- 3 cups water
- 4 chicken legs
- 2 chicken thighs
- 1/2 white onion
- 3 cloves garlic
- dash salt and pepper
- 1 green onion
- 1 cup sweet rice
- In a large pot, bring the chicken soup and water to a boil.
- Add whole half onion, garlic cloves, and sweet rice. Add chicken legs, thighs and dash of salt. Cook on medium heat for about 25 minutes.
- Cover and cook for another 10 minutes.
- Ready to serve. Optional: You can add a dash some pepper on top. Typically you will garnish with chopped green onions, cilantro, and dried garlic on top. Some even buy Chinese donuts (essentially fried breadsticks to eat with congee).
