Chocolate Chip Zucchini Bread

This is a new twist to zucchini bread with chocolate chips and pecans.

Ingredients:

  • 3 cups all purpose flour
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp nutmeg
  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini
  • 1 Tbsp. orange zest
  • 1 tsp. vanilla
  • 1 cup chocolate chips (I used mini chips)
  • 1 cup chopped pecans (I omitted)

Directions:

Mix together the eggs and sugar with electric mixer till lemony looking. Add the oil and continue beating, then add the zucchini and orange zest.

Ad

Stir or sift the dry ingredients together, and slowly add to wet ingredients. Mix well and add 1 tsp. vanilla. Add by hand, 1 cup chocolate chips and 1 cup pecans.

Place in a loaf pan and bake. Time for baking is approximate; check after 50 minutes. Insert a toothpick in center, if it comes out clean, it is done.
