Cinnamon Raisin Coffee Flavored Bars

This is an old recipe from my 1957 Betty Crocker Cookbook. It is always a hit when I make it.

Ingredients:

  • 1/4 cup soft shortening
  • 1 cup brown sugar
  • 1 egg
  • 1/2 cup very strong hot coffee (I make it twice as strong as I normally would.)
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 cup seedless raisins
  • 1/4 cup chopped nuts (your choice)

Directions:

Cream together the shortening, brown sugar, and egg. Stir in the hot coffee. Stir in flour, baking powder, salt, and cinnamon. Blend in the seedless raisins and nuts.

Pour into a 10 x 10 inch pan. Bake at 350 degrees F for 25 to 30 minutes.

Prep Time: 10 Minutes
Cooking Time: 35 to 50 Minutes
