Cinnamon Raisin Coffee Flavored Bars
This is an old recipe from my 1957 Betty Crocker Cookbook. It is always a hit when I make it.
- 1/4 cup soft shortening
- 1 cup brown sugar
- 1 egg
- 1/2 cup very strong hot coffee (I make it twice as strong as I normally would.)
- 1 1/2 cups flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 cup seedless raisins
- 1/4 cup chopped nuts (your choice)
Cream together the shortening, brown sugar, and egg. Stir in the hot coffee. Stir in flour, baking powder, salt, and cinnamon. Blend in the seedless raisins and nuts.
Pour into a 10 x 10 inch pan. Bake at 350 degrees F for 25 to 30 minutes.
