Chocolate Coca-Cola Cake With Chocolate Coca-Cola Icing

CAKE

  • 1 cup butter
  • 1/3 cup cocoa
  • 1 cup cola drink
  • 2 cups all-purpose flour
  • 1 1/3 cups sugar
  • 1 tsp. baking soda
  • 2 large eggs
  • 1/2 cup buttermilk

  • 1 tsp. vanilla extract
  • 1 1/2 cups miniature marshmallows
ICING
  • 1/2 cup butter
  • 1/4 cup cocoa
  • 1/3 cup cola drink
  • 3 cups powdered sugar
  • 1/2 tsp. vanilla extract
  • 1 cup chopped pecans
Preheat oven to 350 degrees F

MAKE THE CAKE:. Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts. Remove from heat.

Combine flour, sugar, and baking soda in a large bowl, stir in butter mixture. Add eggs, and stir until well blended.

Stir in buttermilk, vanilla, and marshmallows. Pour into a lightly greased 13x9" baking pan.

Bake for 25-30 minutes or until a pick inserted in the middle comes out clean. Remove from oven; spread icing over warm wake.

ICING:. Combine first 3 ingredients in a medium saucepan over medium heat, stirring until butter melts.

Remove from heat; stir in powdered sugar, vanilla, and pecans. Spoon immediately over warm cake. (11/11/2008)

Coca Cola Cake

I gather you might be looking for the truly old fashioned coca cola cake recipe not the ever-popular one that calls for buttermilk and marshmallows. To me that one is nothing more than a Texas Sheet Cake or what my mother-in-law calls Cookie Cake. Here is one that reminds me of the kind my mother used to make when I was a kid.

Coca-Cola Cake from the 70's

  • 1 1/2 cups sugar
  • 1 1/2 cups Wesson Oil
  • 2 squares unsweetened chocolate (melted)
  • 1 3/4 cups flour (not self-rising)
  • 2 eggs beaten
  • 1 10 oz. bottle Coca-Cola
  • 1 tsp. vanilla
Cream together sugar and oil. Add eggs, melted chocolate and vanilla. Sift flour and add alternately. Add Coca-Cola and baking soda last.

Bake in greased, oblong pan, approximately 9x13 inches, for 30 minutes.

Icing

  • 1 cup sugar
  • 1/3 cup whole Pet milk
  • 1/4 cup Oleo margarine
  • 1 square unsweetened chocolate
  • 1/4 tsp. salt
  • 1 tsp. vanilla
Combine all ingredients except vanilla in sauce pan, boil for one minute. Remove from heat, add vanilla and beat until cool. Spread on cooled cake.
