Crock Pot Meat Loaf
This is an easy, yet delicious meatloaf, and you can make it without turning on the oven. Put it in the crock pot in the morning, run errands all day and your main course is ready when you get home. The topping makes this meatloaf a real treat.

Bahamian Boiled Fish
Easy and healthy :-) Layer Snapper, potatoes and onion in medium pot. Mix butter, lime juice, thyme, salt, pepper, red pepper flakes and drizzle evenly over Snapper and potatoes.

Sour Cream Chicken Tortilla Soup
In a large pot add chicken, broth, rotel, corn, American cheese or white cheese dip, cumin, chili powder, garlic, paprika, salt, pepper, and sour cream. Bring contents of pot to a boil and then reduce to a simmer. Simmer for 30 minutes.

Frugal Black Beans and Polenta
This is a recipe I found somewhere on the internet and adapted it. It's really filling and makes enough for 6 people and costs about 50 cents per person :) I made it tonight and it was very filling and tasty!

Pulled Pork
Coat the inside of the crock pot with vegetable spray, like Pam. Place 1/2 of the onion slices in the bottom of the crock pot. Put pork roast on top of the onions. Top with remaining onions.

Hawaiian Black Bean & Rice
This is a Hawaiian Luau Dish. Combine the first 7 ingredients. Pour the dressing over it all. Toss to coat ingredients. If making ahead of time, wait until the day you serve it to add the dressing. Serve cold.
