I am looking for hash brown casserole recipes with, or without, soup as an ingredient. Similar to the one that Cracker Barrel serves. Thanks!

Cracker Barrel Hash Brown Casserole Recipe

  • 2 pounds frozen hash potatoes -- thaw
  • 1/2 cup margarine -- melt
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup onion -- chop fine
  • 1 can cream of chicken soup
  • 2 cups Colby cheese -- grated
Preheat oven at 350F. Spray a 9x13 baking pan with non-stick
cooking spray.

Combine soup, margarine, salt, pepper, onions and cheese.

Gently mix in the potatoes and pour into prepared pan or dish.

  • Bake uncovered at 350F for 35 minutes.

  • This is the recipe I found on the internet. You could use a roux (butter and flour) with milk/cream/half & half and chicken broth instead of the cream of chicken soup. (01/20/2007)

    Here is my recipe for oven hash browns, known as 'funeral potatoes' guess a lot of people take to funerals. Anyway,it is very good.

    • 2# frozen hash browns
    • 1 3 oz pkg cream cheese
    • 1 can cr of celery soup
    • 1/2 can of evaporated milk(this means 1/2 soup can)
    • 1 stick margarine
    • 1 cup shredded cheddar cheese
    • minced onion and chopped green pepper
    Put potatoes, onion, green pepper in 9 X13 sprayed pan.
    Mix soup, cream cheese and margarine together by heating. Pour soup mixture over potatoes. Poke around a little to have liquid go into potatoes.
    Bake 1 1/2 hrs at 350. Last 5 minutes of baking sprinkle the cheddar cheese over top. (01/22/2007)

    • one 26-ounce bag frozen country-style hash browns
    • 2 cups shredded colby cheese
    • 1/4 cup minced onions
    • 1 cup milk
    • 1/2 cup beef stock or canned broth
    • 2 tablespoons butter, melted
    • dash garlic powder
    • 1 teaspoon salt
    • 1/4 teaspoon ground black pepper

    Preheat oven to 425 degrees. Combine the frozen hash browns, cheese and onion in a large bowl. Combine the milk, beef stock, half of the melted butter, the garlic powder, salt, and black pepper in another bowl. Mix untilwell blended then pour over the hash browns and mix well. Heat the remaining butter in a large ovenproof skillet over high heat. When the skillet is hot, spoon in the hash brown mixture. Cook the hash browns, stirring occasionally until hot and all of the cheese has melted (about 7 minutes). Put the skillet in the oven and bake for 45 to 60 minutes or until the surface of the hash browns is dark golden brown.


    Serves 4 to 6 as a side dish. (01/22/2007)

    Cracker Barrel Old Country Store Hash Brown Casserole

    Ease of Cooking: Beginner
    Serving Size: 12

    This was the original recipe that we presented as our recipe. It uses a sour cream base for the binding agent.


    • 1 2 lb. pkg. frozen Hash Browns
    • 16 oz. Sour cream
    • 1 can cream of chicken soup
    • 1 stick butter
    • 1/2 C. Chopped onion
    • 2 C. grated Cheddar Cheese **personal note, I like sharp the best

    Place potatoes in a greased 9x13 inch pan. Season with salt and pepper. Melt butter in the microwave. In a bowl add minced onions, sour cream, and cream of chicken soup, and melted butter. Mix these items together. Pour soup mixture over potatoes; sprinkle with Cheddar Cheese. Bake at 350 degrees for 45 minutes, or until all is completely warm, and the cheese begins to melt.
