Curry you can have with rice or roti.
- 1 whole chicken or pieces cut, skinned and rinse
- 1 tin coconut milk
- 2 Tbsp. sunflower oil
- 1 Tbsp. lemon juice
- 2 Tbsp. ginger and garlic crushed
- 4 green chillies
- 1 large tomato chopped
- 2 medium onion chopped
- 2 sticks cinnamon
- 2 pods aniseed
- 3 cloves
- 2 pods cardamom
- 3 stems curry leave
- 1/2 bunch coriander
- 1/2 tsp. garmasala
- 1/2 tsp. jeera or cumin powder
- 1/2 tsp. curry powder
- 1/2 tsp. turmeric powder
- salt to taste
Fry onion in oil till it browns a little, then add ginger and garlic and saute for few seconds. Add the whole spices and keep stirring not to burn. Add the curry powder, turmeric powder and tomato and cook a little.
Add the chicken and lemon juice and cook for a while and add the rest of the spices. Add the coconut milk and cook till the gravy gets thick. Garnish with curry leaves and coriander leaves.
