Eva's Potato SoupEveryone loves this on a cold winter day. We eat it like it is, but it also tastes good with cheddar cheese or bacon sprinkled on top!

Total Time: 2 hours cooking, 1/2 hour prep

Yield: 8

Ingredients:

Steps:

  1. Saute the onion until transparent. Add the potatoes, carrots and celery. Add water to barely cover the potatoes. Season with the bouillon cubes and salt and pepper. Bring just to a boil, then simmer 1 1/2 - 2 hours.
  2. Serve as it is, or use an immersion blender to smooth it out.
