My grandson Lance loves Fig cookies!

Total Time: 2 and 1/2 hours

Ingredients:

  • 1 lb dried figs or 2 lbs. fresh figs
  • 1 cup sugar
  • 1/2 cup water for fresh figs
  • 1 cup water for dried figs
  • 1/2 cup butter, room temperture
  • 1 cup sugar
  • 1 egg
  • 1 Tbsp cream or milk
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 3/4 cup flour
  • 1 tsp baking powder

Steps:

  1. Soak diced figs in water for one hour. Add sugar, cook on medium heat until a thin jam consistency. Beat sugar, butter, egg, milk and vanilla until well blended. Add dry ingredients. Mix well and refrigerate for one hour.
  2. On well floured surface, I mean really well floured surface, place 1/2 of the dough; knead about 6 times.
  3. Roll out to 1/4 inch thick.Line 13 x 9 inch glass dish; cover with figs. Roll remaining dough, cover figs.
  4. Cook at 350 degrees F for 30 minutes.
  5. Let cool and cut into squares.
