My grandson Lance loves Fig cookies!

Total Time: 2 and 1/2 hours

Source: Scribbled in a book!

Ingredients:

  • 1 lb dried figs or 2 lbs. fresh figs
  • 1 cup sugar
  • 1/2 cup water for fresh figs
  • 1 cup water for dried figs
  • 1/2 cup butter, room temperture
  • 1 cup sugar
  • 1 egg
  • 1 Tbsp cream or milk
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • 1 3/4 cup flour
  • 1 tsp baking powder

Steps:

  1. Soak diced figs in water for one hour. Add sugar, cook on medium heat until a thin jam consistency. Beat sugar, butter, egg, milk and vanilla until well blended. Add dry ingredients. Mix well and refrigerate for one hour.
  2. Ad
  3. On well floured surface, I mean really well floured surface, place 1/2 of the dough; knead about 6 times.
  4. Roll out to 1/4 inch thick.Line 13 x 9 inch glass dish; cover with figs. Roll remaining dough, cover figs.
  5. Cook at 350 degrees F for 30 minutes.
  6. Let cool and cut into squares.

Could you please let me have the directions for making pastry as There are no directions for making the pastry in the recipe. Thank you Marie
