Savory Muffins

Now we all love warm sweet muffins, but there are a group of muffins that never get any recognition. They are called savory muffins because they are not sweet. They can be a herb muffin or one with vegetables instead of fruit.

Add Ice Cubes to Empty Muffin Tins
When baking cupcakes if I don't fill all of the tins, I put an ice cube in the empty cups. This is easier than filling the empties with water.

Round Top Muffins
For high rising, rounded tops on muffins like you see in the bakeries, preheat your oven to 500 degrees F. As soon as you put the muffins into the oven, decrease the temperature to whatever the recipe calls for. Remember to decrease the baking time.

Making Muffin Tops Crunchy
I would like to know what Dunkin' Donuts or supermarkets use to make the top of their muffins so crunchy and yummy? It could be something as simple as sugar. I've tried without any success in getting that nice crunch.

Bake Brownies in Cupcake Liners
When our five year old grandson was helping me bake brownies, we were getting ready to pour them into the baking pan and he wanted me to put them in cupcake paper cups instead.

Use An Ice Cream Scoop For Filling Muffin Pans
When you are filling your muffin pans, use an ice cream scoop so that your muffins will all be the same size. Also you will not spill the batter on the top of the pans. Clean up is much easier.

Use A Ladle To Prevent Overflow
When making cupcakes, I pour the batter from the mixing bowl directly into the cupcake pans. I use a ladle to stop the flow between each cupcake.
