Double the juice from your citrus. Either let them float in hot water or place in microwave for about 15-20 seconds. Remove and let cool to a temperature that doesn't burn the fingers.

Whenever you have fruit that is close to going bad, instead of throwing it away, just cut, chop, or puree it in a blender and freeze in appropriate size containers for future baking or for yummy smoothies.

I rarely purchase a fresh pineapple because they are such a pain to remove the skin without losing a lot of the fruit. Well, here was a 'duh' moment when a neighbor shared with me how she peels a pineapple.

| Preparing Strawberries for Storage

When I buy ripe strawberries that are in the plastic clam shell type packaging, I look through it and remove any bruised berries. I fold a paper towel and put it on top of the berries. I flip the container over so it is upside down, and refrigerate.
