We either peel it and slice or just slice it. You have to blanch it in boling water (make sure the water is boling when you put them in) for 3 minutes in order to freeze. We put it in zip lock bags, squeeze out as much air as possible and lay flat in freezer. To cook it, I usually boil it alone or put in soup. You can fry it, batter it and you should lay each slice flat in the pan so it can cook properly. If you don't it will be a mess and not fried. I fry mine on medium heat to be sure it gets a crust.

Do you put it in cold water after boiling.

Do you slice and then boil or boil and then slice?

Slicing them first will cook more evenly.
