Fresh Cranberry Relish

Something my mother used to keep in the fridge a lot when I was a kid. She usually served some kind of salad or fruit at every meal.

Ingredients:

  • 1 orange, cut into quarters and seeded
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 cup chopped unpeeled apple
  • 1/3 cup sugar
  • 2 cups fresh cranberries

Directions:

Process unpeeled orange in food processor until coarsely ground. Combine with drained pineapple, apple, and sugar in medium bowl; mix well. Process cranberries in food processor until coarsely ground. Add to orange mixture, and mix well. Chill covered, for 8 hours.

Servings: 12
Prep Time: 15 Minutes

I have used this recipe in years past. I am now diabetic and put the minimum amount of sugar, just enough to make the fruit deliver its juices. I then put the remainder amount of splenda to replace the sugar. I do this when I freeze strawberries, peaches and other fruits.
