Gluten Free Potato Cakes Browned potato cakes on plate.When you have leftover creamed potatoes, there are many ways to prepare them for another meal and this is one of them. Hot potato cakes fried in bacon drippings. Delicious!

Cook Time: approximately 15 minutes

Total Time: approximately 20 minutes

Yield: 3-6 servings

Ingredients:

Gluten Free Potato Cakes Ingredients.
 

Steps:

  1. Mix flour with potatoes.
  2. Gluten Free Potato Cakes adding flour to creamy potatoes.
     
  3. Whisk egg.
  4. Gluten Free Potato Cakes Whisking egg in bowl.
     
  5. Stir egg into potato mixture.
  6. Gluten Free Potato Cakes mixing whisked egg mixed into potatoes.
     
  7. Place bacon grease in frying pan. Heat enough to cover the bottom of the pan well.
  8. Gluten Free Potato Cakes Adding grease to pan.

  9. Remove excess.
  10. Gluten Free Potato Cakes removing excess grease from pan.
     
  11. Drop tablespoons of mixture into hot bacon drippings.
  12. Gluten Free Potato Cakes Frying potato cakes in pan.
     
  13. Fry on medium heat until golden brown on each side.
  14. Serve hot.

Mmmm looks good. Have to try this for my M-I-L. Shes celiac but vegetarian too so have to leave out the bacon grease. Maybe add some scallions or rosemary?

I usually add some chopped onion. A friend says she likes a dollop of applesauce over her tater cakes. Haven't tried it though.
