If you do not have honey, you can use sugar or sugar substitute.

  1. Mix garlic with soy sauce and marinate the chicken breasts.
  2. While chicken is marinating, grill slices of pineapple for about 2 minutes on each side. This can be done on an outdoor grill. I have a cast iron grill that I can use on a burner or in the oven that I used to grill the chicken.
  3. When pineapple is done grilling let it cool for a few minutes. While that is cooling mix the remaining ingredients (strawberries, onions, mint, honey, red peppers and lemon peel or zest). Chop the pineapple and add that to this mixture.

  5. Remove chicken from the marinade and put on grill. Grill until cooked through.
  6. Put a chicken breast on a plate and spoon the salsa over it. Enjoy!

Delicious hot but also good served cold.
