Hearty Amish SoupThis is a recipe for a hearty, Amish style soup. Packed with good barley, brown rice and fresh vegetables. It is not only healthy, but tastes great! You may halve the recipe, but I like to make a large batch. We eat it a few nights, then freeze the rest for an easy meal another time. So convenient!

Total Time: Around 1 hour, 20 minutes prep included.

Yield: About 24 main dish servings.

Ingredients:

Steps:

  1. Bring the water to a boil in a large pot. Add your measured dry ingredients and bring to a boil.

  3. Add your seasonings and lower the stove to simmer for about 30 minutes.

  5. While the beans and grains simmer in the pot, brown your sausage and set aside.

  7. Chop and slice your veggies.

  9. When your beans and grains are close to tender, add your sausage, veggies and undrained canned tomatoes to the pot. Bring to a boil, simmer for about 30 minutes, or until veggies are tender.

  11. Remove from heat and enjoy! Top with cheese if desired, and add some buttered bread.:)

You got the salt and the sausage quantities mixed up. Otherwise this is the standard "Stewp". When the pot is half empty, you simply add more stuff, and different spices like chili or paprika or even curry. And smoked farmer sausage, of course. It has the fat needed to digest all the veggies, and it adds flavor and some salt. That is how you get away with so little salt.

If you add 4 cups of salt like the above recipe states, you can use it to melt the ice on your driveway, but not much else. Just exchange salt and sausage.

Do we need to soak the hearty soup mix prior to cooking such as with dry beans
