Hot Chicken Salad Casserole

This is a great casserole! I love the water chestnuts, egg, and the potato chips topping it. Very, very good!

Ingredients:

  • 2-3 cup cooked chicken
  • 2 cup chopped celery
  • 1/2 cup diced onion
  • 1/2 cup diced green pepper
  • 3/4 cup mayonnaise
  • 1 can cream of chicken soup
  • 1 can water chestnuts, drained
  • 3 boiled eggs, diced
  • 1 tsp. lemon juice
  • 2 cup potato chips

Directions:

Mix together chicken, celery, onion, and green pepper.

Mix together mayonnaise, chicken soup, and lemon juice.

Layer this by putting half of the chicken mixture in a 9x13 casserole, then add half of the soup mixture. Next add the chestnuts and boiled eggs, then add the chicken mixture and then the soup.

Crush the potato chips and spread over the top.

Bake in 350 degrees F oven for 40 minutes.
