Ingredients
  • 1/4 cup margarine, softened
  • 1 pkg. date bar mix
  • 1/2 cup hot water
  • 1 pint vanilla ice cream

Directions

Preheat oven to 400 degrees. Mix margarine and crumbly mix (from date bar mix) with a fork. Spread in 9x13 inch baking dish. Bake for 10 minutes (do not overbake); remove from oven and stir to break in pieces. Reserving 1/2 cup for topping. Press remaining mixture in bottom and sides of a 9 inch pie pan. Cool.

In a mixing bowl, mix together date filling mix and hot water. Cool. Spoon ice cream into pie shell and spread date filling on ice cream. Sprinkle remaining crumbly mixture on top. Serve immediately or freeze for a later use.

This is an ice cream pie made with canned pumpkin. This pumpkin pie is one of my favorites! When possible, I try to replace as much of the sugar in a recipe as I can.

Ingredients

  • 2/3 cup semi-sweet chocolate chips
  • 1/4 cup butter
  • 1/4 cup milk
  • 2 cups flaked coconut
  • 1 qt. cherry-vanilla ice cream

Directions

Combine first 3 ingredients in small saucepan. Cook over low heat until chocolate melts, stirring to blend. Fold in coconut. Spread on bottom and side of greased 9 inch pie plate. Spread on bottom and side of greased 9 inch pie plate. Chill until firm. Fill shell with ice cream. Freeze until serving time. Thaw in refrigerator for 20 minutes before slicing. Garnish with sweetened whipped cream.

Ingredients

  • 1 1/2 cups chocolate wafer crumbs
  • 1/2 cup melted butter
  • 20 (miniature size) Heath candy bars
  • 1/2 gallon softened vanilla ice cream
Toffee Ice Cream Sauce:
  • 1 1/2 cups sugar
  • 1 cup evaporated milk
  • 1/4 cup butter
  • 1/4 cup light Karo syrup
  • pinch of salt
  • 1/2 cup crushed Heath candy bars

Directions

Mix chocolate wafer crumbs and butter; press in a 9x13 inch pan and refrigerate. Put candy bars in refrigerator to harden, then crush. Mix ice cream with candy and pour into crust; freeze overnight. Cut in squares and top with Toffee Ice Cream Sauce.

For sauce: Combine sugar, milk, butter, Karo syrup and salt in a saucepan. Boil for 1 minute. Remove from heat and stir in candy. Serve warm over pie.

I love to make this pie it is out of this world!I try very hard not to have to use a oven to cook over summer and this does not have to be baked but it is hard to eat just one slice! The nice thing is if you need to make more then one, you will have enough ingredients to make 2-3 more at the least which is nice. Also if you are storing ice and other things in the fridge, another nice thing about pie is the fact you can use the cookie racks you use to cool your cookies off to stack them on in the freezer. One problem out of the way!

Spread vanilla ice cream into pie crust. Pour caramel or strawberry topping evenly over vanilla ice cream.I like to put this in freezer for about 15 minutes so it is firm enough to put the chocolate ice cream on top. Spread chocolate ice cream evenly over caramel or berry topping. Drop marshmallow creme by teaspoonfuls over chocolate ice cream. Pour fudge topping over marshmallow creme. Sprinkle with pecans. Wrap tightly with foil; freeze pie at least 8 hours or overnight.

Let stand at room temperature about 10 minutes before serving. Serve with whipped topping and cherries. It makes 6-8 servings.

Crush cookies and add melted butter. Mix well. Press into 9 inch pie pan and chill. Melt squares of chocolate over hot water and stir in sugar and butter. Slowly add evaporated milk. Stir occasionally until thickened.

Soften 1 pint of ice cream.combine the cookie crumbs, nuts and butter. Press onto the bottom and up the sides of a 9 inch pie plate. Spread with the softened ice cream.
