Julia's Macaroni Salad

As easy as chopping and mixing various ingredients. A nice contrast to other salads being served at the same meal.

Ingredients:

  • 1 (8 oz.) box elbow macaroni (cooked to a little past al dente)
  • Advertisement

  • 6 large hard boiled eggs, chopped fine
  • 1/2 cup green onion, green and white parts, chopped small
  • 2/3 cup celery, chopped small
  • 1/2 cup dill pickle relish
  • 2/3 cup red bell pepper, chopped small
  • 1/2 cup green salad olives, chopped small
  • 1/2 cup ripe black olives, chopped small
  • 1/2 cup fresh dill, chopped fine
  • 1 cup shredded extra sharp cheddar cheese

Dressing:

  • 16 oz. (2 cups) sour cream
  • 2 Tbsp. apple cider vinegar
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. fresh paprika (optional)

Directions:

Add cooked macaroni to a large mixing bowl along with all the other salad ingredients. Mix well.

Make dressing and pour over salad ingredients and stir until everything is blended together. Cover and refrigerate until ready to serve.

Best if made the day before and refrigerated overnight to allow the flavors to "marry".

Source: I wanted something very different so that there would be a noticeable contrast to my All American Potato Salad when served at the same time. It is certainly that.

Ummmm Did you say black olives? This is really right up our road. My husband will not eat the sweet-tasting salads anymore. I think he'll like this one, and I know I will.

This is a great mix of taste, texture, and color. I, too, love the olives in it. This isn't the usual limp veggies, pasta, and Italian dressing. This would really go well with sandwiches, make them into a special meal.

This is the most different combination of flavors I've ever seen in a pasta salad. I agree with you as to its being a great contrast to the usual sweet potato salads, egg, and tuna. A very welcomed change. This is a keeper. Thank you so much.

I like the difference in this macaroni salad, and we also seem to have a macaroni salad at every cook-out right along with potato salad.and they both have pretty much the same flavors. I'm making this mac salad for 4th of July picnic this years and will let you know how it goes over. It sounds wonderful.

There is no food that I like better than a good Potato Salad. There are many good recipes, and this one looks as good as they come.
