Kale and Onion Quinoa

This is one of my favourite go-to one pot side dishes. It's packed with protein, fiber, anti-oxidants and is super yummy. You will only need a handful of ingredients!
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Yield: 2 servings
- 1/4 onion
- 1 cup bunch kale
- 1/3 cup quinoa
- 2/3 cup water
- 1 tsp cooking oil
- salt and pepper to taste
- First remove the thick bottom parts of the stems from the center of the kale leaves, the supporting ribs. Finely chop the kale leaves, and the onion.
- Heat cooking oil in a pot over medium heat. Add onions and cook until softened, then add kale. Cook over medium heat for a few minutes.
- Pour quinoa into kale and onion mixture, stir for a minute, then add water. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes.
- Add salt and pepper to taste. Serve.
