Simmer lentils in water and tomato juice for 3 hours. Add salt and vegetables and simmer 1 hour. Add seasonings and vinegar 15-20 minutes before serving.

In a large stockpot, melt margarine. Add onion and garlic and saute until soft. Add remaining ingredients. Bring to a boil, reduce heat and simmer 1 1/2 hours.
Place mixture in a blender or the bowl of a food processor fitted with a metal blade. Process until well blended. Serve hot.
