Ingredients

  • 1 head of butter lettuce cleaned and dried*
  • taco meat
  • cheese
  • salsa
  • minced onion
  • sour cream
*I use a salad spinner

Directions

Use a leaf of the lettuce as a taco shell. Fill with your favorite combination of taco goodies. Pick up and eat!

This lettuce is fabulous! I find it in my supermarket in a plastic container. It still has the roots on it. It stays fresh for a long time. The leaves form perfect little cups.

Source: I got the idea off of the Food Network. They used chicken salad. I have a Lap-band and have a hard time eating taco shells. It worked perfectly!

Ingredients:

  • 8 butter lettuce leaves
  • 1/2 pound ground pork
  • 1 Tbsp. vegetable oil
  • 1/2 sweet onion, chopped
  • 1/2 tsp. minced garlic
  • 1-1/2 tsp. soy sauce
  • 2 Tbsp. hoisin sauce
  • 1 tsp. pickled ginger, minced
  • 1-1/2 tsp. rice wine vinegar
  • 1/2 (8 oz.) can water chestnuts, drained and finely chopped
  • 1/2 bunch green onions, chopped
  • 1 tsp. dark sesame oil

Directions:

Rinse whole lettuce leaves and carefully pat dry. Set aside.

In a medium skillet over high heat, brown the pork in vegetable oil, stirring often and reducing the heat to medium, if necessary. Drain, and set aside to cool.

Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger and vinegar to the onions, and stir. Stir in chopped water chestnuts, green onions, and sesame oil, and continue cooking until the onions just begin to wilt, about 2 minutes. Add the cooked pork and stir for about a minute.

Spoon equal portions onto each lettuce leaf, wrap the lettuce around the pork burrito style and serve ;-)

This sounds like a complicated recipe but it's really easy and it's just a matter of already having the ingredients ready and well worth the effort. The chicken refrigerates well if there are leftovers ;-)

Combine 3 Tbsp. of the soy sauce, 4 tsp.of the cornstarch, 3 teaspoons of the garlic and sugar in a large bowl. Stir in the chicken and let stand 15 minutes.

Combine remaining cornstarch and soy sauce with water in a small bowl.

After the 15 minutes, heat 1 Tbsp. of the oil in the wok or large skillet. Add chicken and stir-fry about 4 minutes. Remove chicken and set aside. Heat the remaining oil in same wok or skillet. Add remaining garlic and stir-fry for 1 minute.

Add green onions and stir-fry 1 minute longer. Add cornstarch/soy sauce mixture and the chicken. Cook while stirring until mixture boils and thickens. Remove from heat and stir in the almonds.

Fill each lettuce leaf with about 1/4 cup chicken mixture. Wrap lettuce around the mixture. Eat sandwich style ;-)

A nice way to present a salad is by using lettuce cups.
