Looking For Recipes Using Tofu

Tofu and Sweet Potato Cacciatore

This is just my made up version of a cacciatore recipe.
Quick and painless.

• 1 lb firm tofu cut into pieces
• 1 onion - chopped
• 1 large sweet potato (diced in small cubes)
• 1 28oz can of diced tomatoes
• Seasoning (about 1tsp ea: basil, oregano, rosemary, and thyme)
• 3 cloves of garlic - minced
• salt and pepper to taste

Fry up onion and tofu in a little oil till tofu becomes a little crispy. Add all other ingredients and stir. Place in a deep oven dish and bake for 30 minutes at 350F. Serve over rice. (05/05/2008)

There is a great recipe book that I have that is all-inclusive for using Tofu. It is called "Cook with Tofu by Christina Clarke". It features buying, storing, and preparing Tofu. It has recipes for breakfast, lunch, dinner, and dessert. You may want to check with Amazon or any other book sellers to order or purchase this book. I recommend it highly. (05/06/2008)

There is a fabulous tofu cookbook my brother gave me. It is called "The Giant Book of Tofu Cooking" by K. Lee Evans and Chris Rankin, published by Sterling Press out of NY. It has recipes for everything from breakfast to dessert. I'm sure you could find it on Amazon.
