Looking for a Recipe for Rock Candy

I'm looking for a recipe for rock candy. The one my son and I tried left us with jars of moldy sticks. Thanks in advance.

Title: ROCK CANDY
Categories: Candies
Yield: 1 Servings

  • 2 3/4 c Sugar

  • 1/2 c Water
  • 1/2 c Light corn syrup
  • Salt
  • Food coloring optional
  • 1/4 tsp. Flavoring
  • Confectioners' sugar
I use this at "twistedtattoo.com" to give to everyone that comes in. I have been asked to sell it on the side while people get tattoos. Amazing. This is simple. Make sure you have a 4x4 space to cut - and sharp strong scissors.

In a small saucepan, combine the sugar, water, corn syrup and a dash of salt, and stir until the sugar dissolves. Cover the pan and bring the mixture to a rolling boil. Remove the lid, place a thermometer in the pan, and cook the mixture to 250 degrees F (121 degrees C), to the hard-ball stage. Add the food coloring, if using, and continue cooking until the mixture reaches 285 to 290 degrees F. (140 degrees to 143 degrees C). Remove the pan from the heat and let the mixture cool a few minutes. Add the flavoring and cover for five minutes.

Pour into a buttered pan measuring 7 by 10 inches (18 by 25 cm.). Cut the candy into strips with oiled scissors as soon as it is cool enough to handle. Then cut it into squares or diamond shapes. When the candy is cold, dust it with confectioners' sugar to prevent sticking. (08/19/2004)

INGREDIENTS:

  1. 1 Glass jar
  2. 1 Piece of string (cotton)
  3. 1 Pencil or stick
  4. 1 Paper clip
  5. 2 c Sugar + Additional sugar
  6. 1 c Water
  7. optional: 1 Food coloring

PREPARATION:

Heat the water to boiling, and when the water stops boiling dissolve the 3 cups of sugar into it. Let cool some and reheat (Do Not Reboil) and add as much sugar that will dissolve in it. Add a few drops of food coloring to the solution if desired.

Let cool for two minutes and pour the solution into glass or jar. Tie a short piece of cotton string to the middle of the pencil or stick. Attach a paper clip to the end of the string for a weight. Moisten the string very lightly, and roll in a bit of sugar. Place the pencil or stick over the top of the glass or jar with the string hanging down inside. Leave undisturbed for a couple of days. Depending on how much sugar you were able to dissolve into the water, you should start to see crystals growing in a few hours to a few days.
