Macaroni Salad Recipe

I'm looking for an easy recipe for macaroni salad which includes vinegar, as well as mayonnaise.

Macaroni Salad Recipe

Here's a recipe I got off the Hellman's jar quite a few years ago -

  • 1 cup Hellmann's
  • 2 Tbsp vinegar
  • 1 Tbsp prepared mustard

  • 1 tsp. sugar
  • 1 tsp salt
  • 1/4 tsp. pepper
  • 8 oz. elbow marcaroni, cooked, drained
  • 1 cup sliced celery
  • 1 cup green pepper chopped
I also add 1-2 Tbsp. sweet relish whenever I make this and toss my macaroni with some olive oil so the dressing doesn't soak into the macaroni and it stays creamy. (09/07/2009)

I use elbow macaroni cooked just until tender (drain and rinse), tomatoes, cukes, white onion, bell pepper, cheese, boiled eggs and mayo. (09/09/2009)

Macaroni Salad Recipe

  • 2 cups fusilli pasta
  • 2/3 cup sugar
  • 1/2 cup oil
  • 1/3 cup ketchup
  • 1/2 cup white vinegar
  • salt and pepper to taste

Cook pasta, cool, and refrigerate. Meanwhile mix well sugar, oil, ketchup, vinegar, and salt and pepper. Cook until ingredients are completely dissolved. Cool and mix with pasta and refrigerate overnight. Next day add 2 stalks celery, finely diced, 1 med. red onion, finely diced (I've used yellow), 1 whole red pepper, finely diced, 1 whole green pepper, finely diced, and 1 cucumber peeled and seeded and finely diced. Macaroni Salad

Ingredients:

  • 1 cup mayonnaise
  • 1/4 cup cider or other white vinegar
  • 2 Tbsp. mustard, preferably Dijon style
  • 1 lb. macaroni, cooked according to package directions and thoroughly drained
  • 4 ribs celery, finely chopped
  • 1 medium onion, finely chopped
  • 1 red bell pepper, seeded and finely chopped
  • 1 green bell pepper, seeded and finely chopped
  • 1/4 cup finely chopped fresh parsley
  • 1 tsp. celery seed
  • salt and freshly ground pepper to taste

Directions:

Blend the mayonnaise, vinegar, and mustard together until smooth. Combine with the remaining ingredients and toss to thoroughly combine. Refrigerate for 24 hours and adjust seasoning before serving.
