Peel or scrub the potatoes (I scrub them so that we can get the extra nutrition from the skins) and cut into chunks. Make sure the chunks are roughly the same shape and size for even cooking.
Put potatoes into a microwave safe casserole or bowl. Drizzle with olive oil and stir until potatoes are evenly coated. Season with seasoning salt to taste.
Cover and microwave on high until potatoes are fork tender, about 10-15 minutes, depending on the wattage of your microwave.
Add remaining ingredients and mix well. Microwave on high for about 5 more minutes, or until the mixture is heated through and the cheese begins to melt.

Easy, quick meal!
Place margarine slices in 2 qt. glass baking dish. Layer remaining ingredients, 1/3 at a time, in prepared dish. Cover with plastic wrap. Microwave on high for 20 minutes.

This is a super easy yummy casserole that is so quick to make. Your kids will really love this!

I'm only 19 but have a great (quick and easy) recipe that's really tasty! You can vary your own measurements to taste.
Cook pasta, then drain in colander. Add onion and garlic to hot oiled pot (same pot as pasta). While they are browning, add mince.
When mince is browned, move it into a large casserole dish. Add sour cream, tomato paste and salt and pepper. Microwave for 5 minutes on high.
Add pasta, stir through well. Microwave another 5 minutes on high.
Top with cheese and microwave for a final 5 minutes. Enjoy!
You can also add the ingredients in the saucepan (but it makes for more mess!), and can use the oven instead of the microwave.

Place ground beef in 1 1/2 qt. microwave casserole. Microwave for 4-5 minutes or until beef loses it's color, stirring after 2 minutes. Pour off drippings. Add next 3 ingredients, mixing well.
Melt butter for 30 seconds. Add onion and heat uncovered 3 minutes or until tender. Add chilies, tomato sauce and salt. Heat uncovered for 6 minutes. Beat eggs and half and half and gradually add egg mixture to hot sauce mixture a little at a time.
Cut broccoli into small pieces, cut tomatoes in 1/2 and dice onion. In a bowl, melt butter, add onion and cook 2 minutes. Add broccoli and seasonings, cook 8 minutes. Stir. Add tomatoes, cook 1 minute.
Recipe for Microwave Zucchini Casserole. Use 2 or 3 qt. casserole dish. Melt 2 Tbsp. oleo or butter, add 2 handfuls of bread crumbs or croutons. . .
Combine meat sauce and spices. In another bowl, combine cottage cheese, parsley, egg and pepper. Layer 1/3 of meat mixture on bottom of 9x13 inch glass pan.
Cook spaghetti according to directions; drain. Stir into hot spaghetti the butter, Parmesan cheese and eggs. Form mixture into a 10 inch glass pie plate to form a crust.
