Great summertime treat!

Total Time: overnight

Ingredients:

  • 1 cup finely crushed chocolate chip cookies
  • 2 Tbsp melted butter
  • 1/2 cup milk
  • 1 pt vanilla ice cream
  • 3 pkg. instant vanilla pudding mix
  • 1 Tbsp instant coffee powder or crystals

Steps:

  1. Combine cookies and butter, save 1/4 cup of crumbs. Line 9-inch pie pan with remaining of crumbs.
  2. In small bowl, combine milk and coffee powder. Stir ice cream just to soften; add to milk mixture. Add pudding and stir.
  3. Pour mixture into prepared pie plate and sprinkle crumbs on top. Freeze.
  4. Let dessert stand 10 minutes at room temperature before serving.

When making this for younger kids, I omit the coffee.

Ingredients:

  • 1 1/2 cups semi-sweet chocolate chips, melted and slightly cooled
  • 2 cups whipping cream
  • 2 Tbsp. instant coffee granules
  • 2 Tbsp. sugar
  • 1 tsp. vanilla
  • 1 (9 inch) chocolate crumb or graham cracker crust

Directions:

In large microwave safe bowl, melt chocolate chips; set aside to cool. In mixing bowl, beat cream, coffee granules, sugar and vanilla on low heat until coffee and sugar are dissolved. Beat on high just until stiff peaks form. Set aside 1 1/2 cups for topping. Gradually fold remaining cream mixture into cooled chocolate until well blended. Pour into pie crust. Spread with reserved cream mixture. Refrigerate 3 hours before serving. Store in refrigerator. 6-8 servings.

Ingredients

Crust:
  • 3/4 cup flour
  • 1/4 tsp. salt
  • 1/4 cup shortening
  • 3/4 cup finely chopped walnuts
  • 1 square unsweetened chocolate, grated
  • 1/4 cup firmly packed brown sugar
  • 1 Tbsp. water
  • 1 tsp. vanilla
Filling:
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 tsp. instant coffee powder
  • 1 square unsweetened chocolate, melted and cooled
  • 2 eggs
Topping:
  • 2 cups heavy cream
  • 1/2 cup confectioner's sugar
  • 2 Tbsp. instant coffee powder
  • chocolate curls

Directions

Preheat oven to 375 degrees F. Combine flour and salt in large bowl. Cut in shortening with pastry blender until mixture forms particles slightly larger than grains of rice. Stir in walnuts, brown sugar and chocolate. Add water and vanilla. Toss with fork. Press into 9 inch pie pan to form crust. Bake at 375 degrees F for 15 minutes. Cool.

Beat butter in mixer bowl until creamy. Gradually add sugar and beat until mixture is light and fluffy. Blend in chocolate and instant coffee. Add eggs, 1 at a time, beating for 2 or 3 minutes after each addition. Turn into cooled pie shell. Chill.

Combine cream, sugar and instant coffee in small mixer bowl. Chill for 1 hour. Beat until stiff. Spread on chilled pie.

Ingredients

  • 4 oz. reduced-fat cream cheese
  • 1/4 cup sugar
  • 1/4 cup baking cocoa
  • 1 Tbsp. instant coffee granules
  • 1/3 cup fat-free milk
  • 1 tsp. vanilla
  • 1 carton reduced-fat frozen whipped topping, thawed (12oz)
  • 1-9inch graham cracker crust
  • Reduced-calorie chocolate syrup

Directions

In a large mixing bowl, beat the cream cheese, sugar and cocoa until smooth. Dissolve coffee granules in milk. Stir coffee mixture and vanilla into cream cheese mixture; fold in whipped topping. Pour into crust. Cover and freeze for at least 4 hours. Remove from the freezer 10 minutes before serving. Drizzle with chocolate syrup, if desired.

Note: This is a good low-fat dessert, but if you do not wish to use all low-fat ingredients, you certainly do not have to.
