Alaskan Host Caramel Pecan Oatmeal Muffins

Just heavenly for breakfast or any time of day.

Ingredients:

  • 1 cup sifted flour
  • 1/4 cup brown sugar
  • 1/4 cup shortening
  • 1 egg, beaten
  • 1 cup milk
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup oats
Topping:
  • 1/2 cup brown sugar
  • 4 Tbsp. butter
  • pecan halves

Directions:

Mix softened butter and brown sugar and pat evenly in greased muffin cups. Arrange pecan halves in each. Mix the muffin ingredients until just combined. Fill muffin cups 2/3 full. Bake 20 minutes at 425 degrees F. Turn out onto platter.

Servings: 12
Prep Time: 10 Minutes
Cooking Time: 20 Minutes

Oatmeal Nut Muffins

These make a great, soft muffin. Very hearty for any meal, but especially good at breakfast.

Ingredients:

  • 1 cup flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 3/4 cup quick cooking oatmeal
  • 1 egg
  • 3 Tbsp. shortening
  • 1/2 cup milk
  • 1/3 cup chopped nuts

Directions:

Sift dry ingredients; add uncooked oatmeal. Add remaining ingredients, stirring only until moistened. Fill muffin tins 2/3 full and bake 20 minutes at 400 degrees F.

Servings: 10-12
Prep Time: 15 Minutes
Cooking Time: 20 Minutes

Oatmeal Muffins

Oatmeal Muffins I

Ingredients

  • 1 cup quick oats
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon (opt.)
  • 1 cup raisins (opt.)

Directions

Mix all ingredients; batter will be lumpy. Spoon batter into greased muffin tins 2/3 full. Bake at 400 degrees F for 15-20 minutes. Makes 1 dozen.

Ingredients

  • 1 cup quick oats
  • 1 cup buttermilk
  • 1/2 cup brown sugar
  • 1 egg, slightly beaten
  • 1/3 cup melted shortening or butter
  • 1 cup flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. soda

Directions

Soak oats in buttermilk for 1/2 hour. Add brown sugar and egg. Add shortening and dry ingredients. Mix quickly. Fill greased muffin tins 2/3 full. Bake at 400 degrees F for 20-25 minutes.

Oatmeal Muffins III

Ingredients

  • 2 cups milk
  • 2 cups oatmeal
  • 1 cup brown sugar
  • 1 stick + 2 2/3 Tbsp. margarine
  • 2 eggs
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. salt

Directions

Pour milk over the oatmeal and let stand 1 hour. Cream the brown sugar and margarine. Add eggs. Sift dry ingredients together. Add alternately with oatmeal mixture. Bake at 400 degrees F for 20-25 minutes in greased tins. Makes 2 dozen. You can use half one day and refrigerate the rest to be used later.

Cherry Oatmeal Muffins

Cherry Oatmeal Muffins I

Ingredients

  • 1 cup flour
  • 1 1/4 cup quick cooking oats
  • 3/4 cup packed brown sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup buttermilk
  • 1/2 cup oil
  • 1 slightly beaten egg
  • 1 cup frozen tart cherries, thawed, halved and drained

Directions

Grease 12 muffin cups or line with paper bake cups; set aside. Stir together flour, oats, brown sugar, baking powder and salt in a bowl. Make a well in the center. Stir together buttermilk, oil, and egg in another bowl. Add egg mixture all at once to the flour mixture. Stir just till moistened (batter should be lumpy). Fold in cherries. Spoon batter into muffin cups; fill 3/4 full. Bake in a 400 degrees F oven for 20-22 minutes or till golden. cool in pans on wire rack 5 minutes. Remove from pans; serve warm. Makes 12.

Cherry Oatmeal Muffins II

Ingredients

  • 1 cup old fashioned quick cooking oats, uncooked
  • 1 cup flour
  • 1/2 firmly packed brown sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. ground nutmeg
  • 3/4 cup buttermilk
  • 1 egg, slightly beaten
  • 1/4 cup oil
  • 1 tsp. almond extract
  • 1 cup frozen cherries, coarsely chopped

Directions

Put oats, flour, sugar, baking powder and nutmeg in bowl. Mix well. In separate bowl, combine buttermilk, egg, oil, almond extract. Mix and pour mixture into oat mixture, stirring just until moistened. Add in cherries (cherries can be added frozen, if desired). Mix all of this really well and add to muffin tins filling about 2/3 full. Sprinkle with granulated sugar and bake at 400 degrees F for 15-20 minutes or until golden brown.

Golden Oatmeal Muffins

These are wonderful, moist muffins!

Ingredients:

  • 1 cup flour
  • 3 tsp. baking powder
  • 1 cup uncooked quick oats
  • 1 cup milk
  • 1 egg
  • 1/4 cup sugar
  • 1/2 tsp. salt
  • 3 Tbsp. liquid shortening

Directions:

  1. Mix flour, sugar, baking powder, and salt.
  2. Stir in oats.
  3. Add shortening, egg, and milk.
  4. Mix only until dry ingredients are moist.
  5. Fill greased muffin tins 2/3 full.
  6. Bake at 425 degrees F for 15 minutes.

Sugar-Topped Oatmeal Muffins

These are delicious, moist muffins that are healthy and good for you!

Approximate Time: about 45 minutes

Yield: 12

Ingredients:

  • 1 cup flour
  • 1 cup oatmeal
  • 3/4 cup brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 egg, beaten
  • 3/4 cup milk
  • 1/3 cup oil
  • 1/2 cup chopped nuts ($.85)

Steps:

  1. Preheat oven to 350 degrees F.
  2. Combine dry ingredients in bowl.
  3. Combine liquid ingredients; add all at once to dry ingredients. Stir just until moist. Batter will be lumpy. Do not over mix.
  4. Fold in nuts.
  5. Spoon into 12 greased muffin cups. Top with 2 T. sugar and 1/4 t. cinnamon. Bake at 350 F for 18-20 minutes.
