Same thing, just fresher and saves you money! Mix together equal parts cinnamon and nutmeg, and use in place of the cardamom called for in your recipe. You can use 1/4 tsp. cardamom, if you have it!

Ingredients:

  • 1 tsp bay leaves
  • 2 1/2 tsp celery salt
  • 1 1/2 tsp mustard seed
  • 1 1/2 tsp black pepper
  • 3/4 tsp nutmeg
  • 1/2 tsp cloves
  • 1/2 tsp ginger
  • 1/2 tsp paprika
  • 1/2 tsp red pepper
  • 1/4 tsp mace
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg

Steps:

  1. Grind bay leaves to make 1 Tbsp.
  2. Grind mustard seeds to make 1 1/2 tsp.
  3. Combine all ingredients in a jar, mix thoroughly.
  4. Put a tight lid on it!

This is an expensive seasoning and comes in a large tin. Make your own in small batches. It will be cheaper and fresher.
