Old Fashioned Potato Salad - salad in bowlHere is my mom's recipe for her potato salad! Handed down to each of her children and we all still make this the same exact way. Every party, get together or function, one of us are asked to bring the potato salad. You will love this. I promise. :)

Ingredients:

Old Fashioned Potato Salad - ingredients
 
Old Fashioned Potato Salad - cut vegetables
 

Steps:

  1. Boil whole potatoes with the skins on until fork tender, then chill.
  2. Old Fashioned Potato Salad - potatoes in pan
     
  3. Boil eggs until hard, then chill.
  4. Remove all the skins off the cooked, cooled potatoes with a paring knife. Cut each potato in half, then across each potato several times to make cubes. Fill a bowl with these warm cubed potatoes. Set aside.
  5. Peel all the eggs and quarter each one, set aside.
  6. Old Fashioned Potato Salad - cut hard boiled egg

  7. In a large bowl, add minced celery, red onion, cucumber, dill relish, cider vinegar, salt, pepper, dried dill, Dijon mustard & mayonnaise. Mix all very well.
  8. Old Fashioned Potato Salad - mayonaise & seasonings
     
  9. 4. Add eggs and stir gently. Add cubed warm potatoes. Stirring and folding in well. Making sure all is evenly mixed.

I do not think this is a old fashion potato salad,would never put English cucumber in it.

My Mom who would be 105 would of made her own mayo with eggs vinegar sugar and mustard on stove in a double boiler. Salad was just potatoes hard boiled eggs celery and onion.

And that's how I make it to this day. This is truly the old fashioned way

I find it interesting (and humorous!) that there are those who feel the need to dispute that this is "old fashioned potato salad". It's not the same as my mother made either, but so what!! It's Jackie's & it looks good to me! (Well,except the eggs ... I hate eggs!

Adding cucumbers is not an ingredient for my grandmothers old fashion potato salad. I would leave them out but it may be good. I will try it on a smaller level before hosting to family and friends
