Onion Pie

Ingredients:

• 1 cup finely crushed soda crackers
• 1/4 cup melted margarine
• 2 cups thinly sliced onions

• 2 Tbsp. margarine
• 3/4 cup milk
• 2 eggs
• 3/4 tsp. salt
• pepper, to taste
• 1/2 cup shredded mozzarella cheese

Directions:

1. Mix cracker crumbs with melted margarine; press into 9 inch pie plate for crust.
2. Saute' onions in 2 Tbsp. margarine, just until golden. Put onions in pie shell.
3. Beat eggs, milk, salt, and pepper together; pour over onions.
4. Top with mozzarella cheese and bake for 30 minutes at 350 degrees F.
