Mini Cinco De Mayo Wraps

Cut tortillas into half moons. Cut pepper jack cheese in half diagonally to form triangles. For easier rolling, microwave tortilla halves for 20 seconds. Microwave chicken strips for 2-3 minutes.

Pinata Safety Tips

A pinata at a fiesta is great fun, but can be very dangerous if the hitter is still swinging when the pinata is broken and the kids rush in. I organize this activity by instructing the kids that no one can move until I blow a whistle, or yell a word really loud like "ARRIBA" meaning it's safe to run.

My Famous San Diego Tacos

Cook your ground beef, add onion, salt, pepper, garlic and anything else you like. Set it aside in a bowl near the pan. Clean the pan or use a clean frying pan. Put about a Tbsp. of oil in the pan and let it get hot enough to sizzle if you flick a drop of water at it (stand back, lol).

Fat Free Corn Tortilla Chips or Strips

Tortilla chips are typically fried and laden with fat. Corn tortillas, on the other hand, have NO fat. Make your own chips by cutting the tortillas with kitchen shears into wedges or strips, scatter them on a shallow pan and bake at about 300 degrees F until crisp.
