Peanut Butter Banana Bread

This is a new twist on banana bread with the addition of peanut butter. The flax seed and yogurt makes it healthier too. I didn't have any allspice so I omitted it when I prepared it

Ingredients:

  • 1-1/2 cups mashed ripe banana
  • 1/3 cup plain fat-free yogurt
  • 1/3 cup creamy peanut butter
  • 3 Tbsp. butter, melted
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1-1/2 cups flour
  • 1/4 cup ground flax seed
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon (I used 1-1/2 tsp.)
  • 1/8 tsp. allspice
  • cooking spray

    Glaze

  • 1/3 cup powdered sugar
  • 1 Tbsp. 1 percent low fat milk
  • 1 Tbsp. creamy peanut butter

Directions:

I made these into muffins, but the recipe calls for a loaf pan. If you make muffins, you will have to adjust the time you bake them.

To prepare bread, combine first 5 ingredients in a large bowl. Beat with mixer at medium speed. Add sugars and beat until blended. Spoon flour into dry measuring cups, level with knife.

Combine flour and next 5 ingredients in a small bowl. Add flour mixture to banana mixture, beat just till blended.Stir in nuts.

Pour batter in a 9x5 inch loaf pan coated with cooking spray. Bake at 350 degrees F for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean.

Remove from oven. Cool 10 minutes in the pan on wire rack. Remove bread from pan, cool.

To prepare glaze, combine powdered sugar, milk, and 1 Tbsp. peanut butter in a small bowl, stirring with a whisk. Drizzle over bread.

Your question made me do some research. We were told to wait until after she was 1year old, but only for a choking hazard reason. My 3year old was 18 months when she first had peanut butter (for other health reasons).

My 15 month old has had peanut butter already, no problems. Her doctor said it was fine. However, I will give you these two sites I found that say they shouldn't have it until they're three years old because of a risk of allergy. The 2nd one actually says that the American Academy of Pediatrics is the one that recommends the older age range.Good luck!
