Shoo Fly Pie

Shoo Fly Pie is a favorite dessert in the Amish community, and there are many different variations. Some are more like coffee cake than a pie. The name comes from the days when pies were cooled on the windowsill, and the sweet filling would attract pesky flies, which the cook "shooed" away.

Mother's Day Hat Cake
Bake a round cake and the other half of mix in a round oven safe bowl. Frost the round layer place the bowl shaped layer on top and frost. Flatten each gummie with rolling pin.

Pack Baked Goods in Layers of Baggies
I have found that when taking a bag of these to people I owe a little kindness too or to those not feeling well, the one on the bottom tends to meld with the inside of the lid. To prevent this, I cut the zipper part off a ziploc baggy. Then I open the baggy, cut it in half, put one piece on the bottom and one on the top.

Cornflake Chicken Kiev
Pound chicken to be about 1/4 inch thin. Season chicken with salt, pepper and garlic powder. Slice 8 Tbsp. of butter into chunks and place 2 Tbsp, worth of chunks in a line in the center of each piece of chicken.

My Son's Cheesecake
Cream together cream cheese and sugar. Add beaten eggs, one at a time. Using mixer on high, mix for a minimum of 4 minutes. Pour into shell and bake in 350 degree F oven until done.
