Hawaiian Drop Cookies

  • 2 cups sifted all-purpose flour
  • 2 tsp. Clabber Girl Baking Powder
  • 1/2 tsp. salt
  • 2/3 cup shortening
  • 1-1/4 cup sugar
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1 egg
  • 3/4 cup well-drained, crushed pineapple
  • 1/2 cup finely chopped, shredded coconut

Sift together flour, baking powder, and salt. Cream shortening, sugar, and extracts thoroughly. Beat in egg until mixture is fluffy. Blend in pineapple and dry ingredients. Drop by teaspoonfuls on ungreased cookie sheet 3 inches apart. Sprinkle with coconut. Bake in a 325 degrees F. (slow) oven about 20 minutes. Cookies are better stored for 24 hours. Yield: 4-1/2 dozen 2-1/2 inch diameter cookies. (01/24/2005)

Thank you so much! Is this the orginal recipe from Clabber Girl? I did not remember sprinkling coconut on the top before baking ? Can not wait to bake up a batch!

Thanks again! (01/24/2005)

Pineapple Cookies

Hi,Tuey. You are very welcome. This recipe is from a 15-page recipe pamphlet that I've had for a great many years (the printing date is not on it). The pamphlet is called "Fine Baking is Family Fun With Clabber Girl Baking Powder Featured Recipes". (01/24/2005)

For a heart healthy crunch, try adding almonds or macadamia nuts.

Thanks again!

Pineapple Cookies

I remember as a young adult (must have been at least 35 years ago) my mother and grandmother cooking pineapple cookies - they only used Clabber Girl baking powder; but, the cookies were rather flat, soft, almost white with some yellow tint. Not like the pictures of pineapple cookies that I see in some of these recipes. Did the cookies that you remember resemble my description? I've wanted to taste those cookies again for at least 35 years. (12/17/2009)
