I am looking for a recipe for pineapple cookies that was on the Clabber Girl Baking Powder can about 35 years ago.
Sift together flour, baking powder, and salt. Cream shortening, sugar, and extracts thoroughly. Beat in egg until mixture is fluffy. Blend in pineapple and dry ingredients. Drop by teaspoonfuls on ungreased cookie sheet 3 inches apart. Sprinkle with coconut. Bake in a 325 degrees F. (slow) oven about 20 minutes. Cookies are better stored for 24 hours. Yield: 4-1/2 dozen 2-1/2 inch diameter cookies. (01/24/2005)

For a heart healthy crunch, try adding almonds or macadamia nuts.

I remember as a young adult (must have been at least 35 years ago) my mother and grandmother cooking pineapple cookies - they only used Clabber Girl baking powder; but, the cookies were rather flat, soft, almost white with some yellow tint. Not like the pictures of pineapple cookies that I see in some of these recipes. Did the cookies that you remember resemble my description? I've wanted to taste those cookies again for at least 35 years. (12/17/2009)
