Porcupine Meatballs I

I usually add homemade mashed potatoes and a veggie to round out this cheap but filling meal.

Ingredients

  • 2 pounds hamburger
  • 1 1/2 to 2 cups uncooked minute rice
  • 1 can of tomato juice

Directions

Mix 2 pounds of hamburger and 1 1/2 -2 cups uncooked minute rice. Then form into meatballs. Add 1 can tomato juice and cook in a pan on the stove over a medium heat until meatballs appear brown. I usually put a lid on my pan as the tomato juice tends to splatter while cooking

My mother made porcupine meatballs in the pressure cooker, when I was little. I want to try ground turkey. Would it taste the same? (02/15/2008)

Porcupine Meatballs

I use the tomato juice recipe, add a little salt, pepper, garlic powder and Italian seasoning. I make them into fist size meatballs and pressure cook them for 10 minutes. When I lift the lid, I drape a piece of provolone cheese over each one. It will immediately melt and is very tasty. Usually serve with mashed potatoes and steamed cabbage. It's one of my family's favorite meals. (02/11/2009)
