Porcupine Meatballs

Ingredients:

  • 1 lb. chopped round steak
  • 1 1/4 cup rice, uncooked
  • 1/2 cup bacon, diced
  • 1 Tbsp. minced onion
  • 1 Tbsp. chopped green pepper
  • 1/2 tsp. salt
  • 1 reg. size can tomatoes

Directions:

Mix together all ingredients, except tomatoes. Shape into balls. Place into greased casserole, add tomatoes over top. Cover and bake 1 1/2 hours at 350 degrees F.

Porcupine Meatballs with Pasta

  • 1/2 cup uncooked rice
  • 1 lb. ground beef
  • 1 small onion, diced fine
  • 1 egg
  • 1/2 t. salt
  • Pepper to taste
  • Sugar to taste
  • 1 can stewed tomatoes ; diced
  • 1/2 green pepper, diced
  • 1 med. jar of V - 8 Juice
  • Cooked pasta
Rinse rice, cover with cold water and let soak for about 1 hour. Drain well. Combine the rice, ground beef, onion, egg, salt, pepper and sugar. Mix until well blended. Shape into meatballs. Brown in skillet on all sides. Place meatballs in a baking pan. Pour in the tomatoes. Stir in the green pepper. Cover with lid/foil and bake in a 350 degrees F. oven for about 1+1/4 - 1+1/2 hours. Check every 30 minutes and add the V - 8 Juice, if drying out. Serve over spaghetti or macaroni, or any pasta.
