Potato Pancakes

Ingredients:

  • 3 large potatoes, peeled and grated
  • 2 onions, grated
  • 2 Tbsp. flour
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • Ad
  • Crisco or lard for frying (use solid shortening)

Directions:

Mix the grated potatoes and onion; drain off excess moisture. Stir in the flour, eggs, salt and pepper. Drop by tablespoonfuls into not too deep hot fat. Brown and turn; drain on paper towels. Serves 6.
