Quick and Easy Rice and Beans

This is super quick and easy, especially if you use leftovers. You can change the ingredients easily, use different beans, sausage, or salsa, and add in what you want.

Ingredients:

  • 2 cups cooked rice, or as much as you need for the number of people you are feeding
  • 2 cans kidney beans, drained, or the kind and amount you like
  • 1 lb. sausage, sliced (my daughter liked smoked sausage, so I always used that)
  • 1 jar salsa - I use homemade
  • frozen or fresh corn (optional)

Garnishes:

  • fresh tomato, chopped
  • sour cream
  • green onions, chopped
  • fresh cilantro, chopped
  • grated cheese of choice

Directions:

Cook the sausage according to package directions or use leftover. Then stir everything together (except the garnishes!) in a pot. The rice will absorb some of the liquid, so use enough salsa to keep it from sticking or add tomato or V-8 juice as needed. Heat it on medium or medium high until it is bubbly, then reduce the heat to medium low until heated through. Stir often to keep the rice from sticking.

Serve with bowls of whatever garnishes you like. You can get creative with garnishes - why not some chopped avocado?

My hubby and I often have a meal like this just using up all the leftovers from the homemade Taco and Burrito parties our children enjoy about once a week. If there are leftover tortillas (flour or cornmeal ones) toast them and eat them with your "one-pot" meal. With or without cheese, they're very good as chips.

This is the way we were used to eating before we moved in with our son and daughter-in-love. They are young and want more meat than we do. We like the sausage (smoked especially), but we like it just as well without the meat.
